Brøste has manufactured and marketed a range of liquid smoke and smoke flavour products under the Scansmoke trademark since 1970. In this period of over 30 years we have gained a great deal of knowledge about smoke flavour applications in the food industry and are able to help and guide our customers in the best possible way.
Scansmoke has developed and grown continuously since its inception and now consists of two separate product groups:
The liquid smokes named the PB-series for replacing the conventional smoking process and the Smoke Ingredients serie, which include smoke oils, powders, salts, rusk and emulsions.
Brøste A/S can therefore offer a complete range of smoke flavor products for all applications in the modern food processing industry. In a constantly changing food industry, where new manufacturing processes are implemented every day, Brøste are able to assist you by keeping abreast of new trends and developments, to ensure you the best possible advise and support at all times.
Scansmoke is made exclusively from European beech wood. The wood is pyrolysed, condensed and purified to remove undesirable impurities such as PAH (polycyclic aromatic hydrocarbon), a potential carcinogen which can be one of the problems associated with traditional smoking. Scansmoke is based on pure, natural raw materials and all products comply with the European Guidelines on smoke flavours. All products are approved by the National Food Agency of Denmark and have been tested by leading food manufacturers worldwide.

Scansmoke PB products Scansmoke PB products are the modern alternative to traditional smoking. This group of products are natural liquid smokes and aromas, which are used to replace traditional smoking methods. They offer a wide range of processing benefits to food manufacturers, and reduce the environmental impact, whilst still maintaining traditional high quality as well as product colour and flavour. Scansmoke PB products are mainly designed for use on the surface of food products, e.g. sausages and ham, giving them a traditional golden brown colour and the delicious, well-known taste of hardwood smoke. Liquid smoke products are available in both water-soluble and water-insoluble types.
Scansmoke Ingredients The range of Scansmoke Ingredient products are based on several concentrated smoke flavours isolated from condensed smoke vapors. These concentrated flavours are composed of very powerful smoke components giving smoky notes to a broad range of applications. The concentrated smoke flavours are supplied on a range of carriers like maltodextrin, salt or oils or sold in pure form. The Scansmoke Ingredient products typically find uses in the flavour, spice blending, snack, meat, fish, and poultry industries. Prepared foods and instant products e.g. powdered soups, powdered sauces and noodle blends are also well known application areas. The product range also includes smoke concentrates emulsified with water for injection purposes.
Scansmoke Intermediates Brøste offers a high-quality, competitive range of smoke flavour intermediates, all of which belong to the pyroligneous acid product family. Smoke flavour Intermediates are used in the liquor industry to add slightly smoky or woody notes to spirits like cognac and whisky. The main purpose of the intermediates however, is as a raw material for further processing of the final flavour for use in the meat, snack, or other food manufacturing process.
